- How many should I order?
- Three to four plates per person for a meal, ordered in waves rather than all at once.

- Rounding up is normal and enough. Service is not tipped at the 10–15% rate common in the UK or US.
The clock is the hard part
Visitors from Germany, Switzerland and the UK routinely arrive at a restaurant at 19:00 and find it shut. Spain runs about three hours behind northern European meal times: lunch is the large meal, taken from 14:00, and dinner starts when other countries are thinking about bed.
Adjust by moving lunch later rather than trying to eat dinner early. A proper 14:30 lunch makes a 21:30 dinner feel natural.
What tapas actually are
A tapa is a small plate, not a cuisine. The same kitchen serves the same dish as a tapa (a few bites), a ración (a full plate to share) or a media ración. Ordering raciones for the table is how most Spaniards actually eat.
In the Basque Country the equivalent is the pintxo — laid out on the bar, taken by hand, counted at the end by the number of cocktail sticks on your plate.
Ordering without overdoing it
Order in waves. Three or four plates, eat them, then decide. Kitchens expect it and the food arrives better for it.
Reliable openers almost anywhere: pan con tomate, boquerones, pimientos de Padrón, tortilla, jamón. Then something cooked to order — gambas al ajillo, croquetas, whatever is chalked up that day.
Where it is best
Andalusia for the free-tapa tradition, San Sebastián for pintxos, Madrid for range and late hours, Barcelona for seafood and for the markets. On the coasts, walk two streets back from the seafront before choosing.
